As one of the Korean traditional foods for longevity and recuperation, samgyethang (stewed chicken with insam) is part of the heritage showing the excellent national food culture and cuisines.
Historical documents such as Myonguipyolnok tell that Korean people had extensively raised chickens since ancient times and they widely used them in their diet.
According to them, egg and chicken dishes were indispensable foods, especially on birthdays, weddings, memorial services and holidays. Chicken was a popular food that was served to those in sickbed and with debility or to an honoured guest.
The food is made by boiling chicken with insam, chestnuts, dates, gingko nuts and garlic in its belly.
It was one of nourishing foods in midsummer, and the soup made with Kaesong Koryo insam was famous.
Insam picked 5 to 6 days ago is the best in making the food.
And it is customary to use young black chicken weighing about 500g.
Samgyethang is tasty and highly nutritious just like thick chicken broth.
In the Kaesong area, there is an old legendary tale that a filial son obtained chicken and insam even in his frugal life to serve samgyethang to his sick parent. Hence the soup is also called hyosongthang (the soup associated with filial piety).
As it contains the peculiar flavour of traditional dish and adds taste to diet, its cuisine and custom are carried on.
